Balsamic, Garlic, and Beet Salad

Yes. Beets again. And I don't consider myself a beet lover. There's something about the balsamic that cancels out the dirt flavor of the beet. Yes, beets straight up taste like dirt. At least my tongue has always told me so. But for some reason this salad rocks my mouth. Let your hair down and let it rock yours too.


I wash, peel, and slice my beet. Then toss in a bowl with some fresh chopped garlic and a balsamic reduction or vinegar and some fresh ground pepper. I broil in the oven for about 10 minutes. Done and done people.  I just drizzle my salad with a little  walnut oil or grapeseed oil. No dressing needed. Especially with an avocado.
