Kale Ice Cream & Italian Ice

i thought i'd quickly share some of our favorite cool treats that we're wolfing down in honor of jude's tonsils (RIP)

first up, kale ice cream. yes, kale. shut up and listen. i promise you will be pleasantly surprised. it really is delicious and incredibly easy to make.
this recipe is compliments of my sister in law jen, who always has amazing recipes and whole food tid bits. (she's also the one who made jett's little swing) she's pretty much amazing.

  • 2 cups of almond milk
  • 1 cup coconut cream
  • 1 cup kale leaves, packed
  • 1 lg banana, frozen
  • 1/2 cup agave nectar
  • 1/2 cup coconut oil
  • 1 1/2 teaspoon vanilla extract
blend all ingredients until smooth. freeze in an ice cream maker.

next up, italian ice.
i was trying to get creative with some home made treats because i don't want to buy a lot of sugar pops. ya know? of course you do.
all you need is:
  • ice
  • juice of choice/nectar
  • agave nectar

no measurements needed. just blend your ice while adding juice till desired consistency and a splash of agave. you'll probably need a touch more agave if using nectar. it's less than sweet, shall we say.

that's it. it helps to have an amazing blender that could puree a cow (blendtec/vitamix). it makes the best slushy ice. also good for margaritas. the adult treat for a tonsillectomy.
