Recipe of the Week



Brownies (with spinach and carrot puree) and Home Made Chocolate Fudge Ice Cream
(brownies: adapted recipe from Deceptively Delicious by: Jessica Seinfeld)


  • 3 oz bittersweet chocolate (i used the baking chocolate above)
  • 1/2 cup carrot puree
  • 1/2 cup spinach puree
  • 1/2 cup brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons coconut oil
  • 2 large egg whites
  • 3/4 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
Melt your chocolate in a double broiler
In a mixer
add the melted chocolate
vegetable purees
brown sugar
cocoa powder
coconut oil
vanilla

Mix until smooth 
 add in egg whites

In a bowl
mix the flour
baking powder
sea salt

slowly add the flour mixture in your mixing bowl. Stir just enough to mix.
Pour into an 8x8 pan and cook for about 35 minutes at 350.
Let them cool completely before serving or you can still taste a hint of some veggies.

So here's the deal. Are these the best brownies ever? Well no, of course not. But they are really good considering they have vegetables in them. And they are actually good for you. And paired with this ice cream (recipe below), mercy. This ice cream. It is so good. Rich, dairy free deliciousness. And incredibly easy.
