so i started with jessica seinfeld's deceptively delicious doughnut recipe. i altered it slightly to make it dairy free. these doughnuts are more like muffins in the shape of tiny doughnuts. but they're delicious and very moist. with all of the pumpkins we're growing, i have a feeling we'll be making a lot more of these.
MIX
1/2 cup brown sugar
1 cup pureed pumpkin (you can do half sweet potato and half pumpkin)
1/2 cup almond milk
1 large egg white
1 tablespoon coconut oil
1 teaspoon vanilla
THEN ADD
1 cup flour (i use a mixture of whole wheat, buckwheat, and anything else i have)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon pumpkin pie spice
dash of cinnamon
dash of salt
bake at 350
now i used tiny doughnut pans found here which only called for 10 minutes baking time
regular sized pans call for double that (20 min)
glaze (optional)
1/4 cup almond milk
1 teaspoon vanilla
2 cups confectioners sugar
warm the milk and vanilla on the stove and whisk in powdered sugar
