Summer Pumpkins?

it's weird picking pumpkins in the summer. 

and it makes me a little anxious for fall. i'm always so ready for the new season no matter which one. but fall happens to be my all time favorite. warm foods. a nip in the air. cute boots. 
and of course, we're one step closer to the holidays. and holidays are so much more fun with excited kids. it gets better each year.
so what to do with all of these pumpkins? i thought i'd try my hand at some homemade pumpkin pies. we're dairy free and sugar free, so it always makes me a little nervous to use substitutions in classic recipes. 
we used almond milk instead of canned milk and agave/maple syrup instead of brown sugar and coconut oil instead of butter for the crust. pie crust with no butter? i do declare. my southern roots are being severed. but...they turned out beautifully. and jude had a blast cutting all of the fun shapes for decoration. it was a good day.




jordan's birthday is tomorrow and jude will be starting school next week. there is much to do.
i'm so excited! did i mention i love this time of year?
